Popular Appetizer: From the culinary capital of the Philippines which is Pampanga, derived a delicious appetizer called pork sisig. It was invented by Lucia Cunanan or popularly known as Aling Lucing the queen sisig. Sisig is composed of pig's face or ‘maskara', ears and a moderate amount of chicken liver.
In now a days sisig can be bought in different restaurants wherein mayonnaise and eggs are added at the top along with chop onions to make it more tastier. Before grind pig's brain was use to bind the components together, but mayonnaise are used as an alternative.
To cook sisig first, grill the maskara to remove the bristle, boil until it become soft and chop into smaller pieces. Saute the onions, garlic, chili , mascara and chicken liver. Add the soy sauce, vinegar, and pepper, add a right amount of water just to make it even softer. Serve in a sizzling plate , put the mayonnaise and the egg on top of it.
